I need to start with a disclaimer. Yes, these are gluten free and I didn’t use any extra refined sugars, but my GOD they are so damn delicious. I am on a mission to make sure that even if you don’t care about gluten free or healthier options at all, these gluten free brownies are on your to-bake list. No mixer needed just a lot of chocolate and a whisk.
Second, I hope you love chocolate. These are so fudgey, dense and deeply cholately that you will be in chocolate heaven. When they are completely cooled, the extra half cup of chocolate chips become the perfect, soft chocolate bites throughout the brownie. I just need you to try these, I can’t stress it enough! If you are making a Valentine’s Day Dinner for your man, these gluten free brownies are perfect. Have one with a scoop of ice cream after dinner. And then have more once dinner finally digests and late night snacking kicks in. And if you need a Galentine’s Day chocolatey dessert, these brownies are the move.
The recipe itself is ridiculously easy. Use your favorite semi sweet chocolate chips. I used my favorite (& I know I won’t shut up about them) dairy free Enjoy Life Chocolate chips. I linked them here for you from Amazon. This is the 6ct box, but it’s way cheaper to order them this way and I am known for my insane bulk orders. You never know when you’re going to run out of something and need it right away!
To finish off, I am linking ideas for a little date night menu. Start with a delicious, easy app of Flavor-Packed Bruschetta or Caramelized Onion & Black Pepper Steak Crostini. For dinner serve the most perfect, easy Steak Dinner , Herby Poached Cod or Goat Cheese Stuffed Bacon Wrapped Chicken. Dessert should definitely be these brownies (obviously) or this super easy, make ahead Golden Oreo Vanilla Berry Icebox Cake.

I would sub with melted coconut oil. Maybe 1/2 cup melted coconut oil & 1/4 cup melted ghee if you can swing ghee. Or you could try 1/2 cup coconut oil & 1/4 cup peanut butter! OR 3/4 cup melted coconut oil. But I haven’t tried it yet myself. I WILL do that and make a note 🙂
