    Mimosa Sangria. The ultimate brunch drink has been created here at Quarter Soul Crisis and it is MY version of a bottomless mimosa. A huge pitcher of this mimosa sangria will change every brunch you have coming up. This is THE best drink for Mother’s Day this weekend, and of course, all summer long. It isn’t too sweet, it is filled with fruit (so, health!), and it gives you all of your favorite mimosa flavors.

    Is there anything simpler than dumping a bunch of stuff in a pitcher and barely having to do any work?! That is this drink. Cut up some fruit, dump in some alcohol, and you are set for the day. You can make this ahead and really let it sit, but I would pour the Prosecco in right before serving. That will allow the classic foaming top you love in a mimosa. And it will also keep the drink fizzy for when you take a sip.

    Mimosa Sangria

    I chose Pinot Grigio and Prosecco because they are less sweet, and a little bit more dry. When you pour in the orange juice, it won’t overpower the drink with sweetness, so you can have a second (& third), and still enjoy it. Pair it with my Everything Bagel Breakfast Sandwich Casserole or this Asparagus Puff Pastry tart. You will make everyone at the table happy, and look accomplished as hell while you do it.

    • Large Pitcher

    Ingredients
      

    • 1 Orange sliced
    • 1/2 cup Strawberry slices
    • 1/2 cup Raspberries
    • 3 cups Pinot Grigio
    • 1 bottle Prosecco
    • 1 & 3/4 cups Orange Juice

    Home Cook’s Notes

    You can make this ahead of time and let it sit, even overnight for all the fruit to soak. BUT don’t pour the Prosecco in until just before serving!
