    6 Ingredient Mini Chocolate Coconut Bars

    “Say Hello to my little friend”(s). I have never even seen Scarface, but I am weird. This quote popped into my mind as I was making these and it felt very apt to this recipe. Six Ingredient Mini Chocolate Coconut bars. The healthy Mounds Bars of your dreams. They are gluten free, vegan, no bake, and basically the easiest dessert you can make that is still perfectly delicious. Naturally sweetened with only dates, these mini chocolate coconut bars are sweet, chocolatey and taste JUST LIKE a mounds bar. SERIOUSLY.

    Making them is super easy. But there are two steps to discuss. First, making the date mixture beforehand. Mixing every ingredient at once, while easier, didn’t yield that gooey-center result I was looking for. So, dates first and THEN the rest. Just soak the dates for 20 minutes, and blend them in 30 second intervals w/ your favorite unsweetened nut milk. The final date mixture is supposed to be sticky & thick. Pictured below!

    Next, simply add all of the ingredients. I want to also note that I made 1/2 tsp coconut extract optional. Because let’s be real, buying coconut extract for 1/2 tsp if you don’t have it is super annoying. And it isn’t NECESSARY, but I can’t make them without it! It really brings the coconut flavor. Coconut extract can go from perfect, to artificial tasting really quick, so 1/2 tsp is all you need. And then, we shape the bars.

    And finally, my favorite part, quoting movies I’ve never seen! Kidding. It’s dipping them in the dark chocolate AND quoting movies I’ve never seen. Okay, melt your chocolate. Dip the cold coconut bars into the chocolate and cover them. Next, you scoop it out with the fork, and with the neck of the fork, tap it against the bowl. The excess chocolate will drip into the bowl. This gives you that perfect chocolate coating. Drizzle with extra chocolate AND VOILA! You have made mini chocolate coconut bars.

    I have no idea why I went into so much detail about these today. Probably because they are so good, and just because they are vegan doesn’t mean they aren’t frickin’ awesome.
