    It’s ICE CREAM SUNDAY. This is probably my favorite day of the month, and I just absolutely love making these ice cream recipes for you. January’s Ice Cream Sunday is Vegan Chocolate Chocolate Chip Ice Cream. After making this Charred Leek Creamy Vegan Cashew Pasta, I am now completely in awe of the things that cashews can do. Now that I have discovered these magic beans, or nuts, I should say, I just had to put them in an ice cream recipe.

    Let me first answer your main questions: No, it does not taste like cashews at all. And no, it does not taste like coconut either. This Vegan Chocolate Chocolate Chip Ice Cream tastes exactly as named. It is so chocolatey and filled with chocolate chips. These Enjoy Life completely allergy free, vegan chocolate chips are hands down my favorite to use. I stock up on them on Amazon because they taste amazing and you WILL use them.

    Next, if you have another question, it may be that it is not, in fact, Sunday. It is Monday. Don’t worry, I haven’t lost my mind. But I decided to take some time off for a few days and my recipes got pushed because of it. This Vegan Chocolate Chocolate Chip Ice Cream has been in the works for this entire month. Just know how freaking excited I am to share this recipe with you. It is just so good!!!

    In terms of recipe notes, do not fret about the cashew part of the ice cream base. Making this is very easy. I discovered one simple, yet amazing, tip that will save you from a grainy mousse no matter what kind of blender you are using. Boil the cashews. Instead of just soaking cashews in water like most recipes calls for, boiling them before soaking speeds up the process and softens the cashews greatly. Let them soak for 30 minutes to four hours, and throw them in the blender with the rest of the ingredients. As a result, this ice cream base is silky and lick-the-spatula delicious.
