One of the very first recipes I posted on Quarter Soul Crisis was one very similar to this: a delicious Ground Beef and Bok Choy Stir Fry w/ Cauliflower Rice. This was way back when, when my blog LITERALLY had 3 views a month. And I was thrilled about those three views, by the way! But I had no idea how to even write a recipe. I didn’t have a recipe plug-in for easy reading, and I took the picture with my iPhone. See below! I was still so proud of it and so excited.
The integrity of the original recipe is still in tact. But now it is much easier to read and follow. I packed it with way more veggies, more flavor, and NOW it’s an easy one pan meal. There is a note at the bottom that explains this Ground Beef and Bok Choy Stir Fry is made for one pan. But if you like to serve your stir fry on TOP of your rice, cook the cauliflower rice in a separate pan and quickly toss for five minutes. So easy.
A quick note on Cauliflower Rice: it is so simple. You can buy frozen cauliflower if you’d like. But I literally buy a big head of cauliflower and grate it. I like to use a fresh head of cauliflower because I don’t like when my riced cauliflower is too soft. Feel free to make this recipe however you’d like with whichever twists you come up with!
