Watermelon Feta Skewers. This recipe is wildly simple, and oh so delicious. I didn’t get very creative with the name as you can see. While the skewers are simply watermelon and feta, how it’s seasoned makes the dish. This recipe does not have much nuance for description below, but I shared a few different ways to make this dish that I think would be fun. First lets talk ripe watermelon.
Picking a Ripe Watermelon
Choosing the perfect watermelon can be a pain. Watermelon are huge & heavy and sometimes a little expensive, plus you are left with so much once you buy one. We need it to be perfect. Here are my tips:
- Always look for a big yellow spot. This is called the field spot and it is where the watermelon was resting on the ground. A big yellow spot is GOOD, and it means the watermelon was nice and happy sitting in the sun.
- Faded green lines: star dark green against a light, teal-ish green is not what you want. Lots of green, dull, matte skin instead of shiny.
- Weight: a heavy watermelon for its size is a really good watermelon
- Finally, a bunch of super tiny holes in a line are not the sign of a bad watermelon. They actually are pollinator lines and a sign the watermelon has lots of sugar.
So Many Options
There are a plethora of ways to serve these watermelon skewers. Put them on bamboo skewers or toothpicks and serve on a tray. Screw the skewers and serve in a bowl as a salad. Grill them. Add Tajin or chili powder for a mexican spice or flair.
We can also play with the cheese! Speaking of tajin or chili powder, maybe you stick with that route and use queso fresco. I personally use Mt Vykos Goat Feta. This adds a little bit more creamy-ness and that goat cheese funk we love. You can also just use your favorite! If you are a feta-hater, and want the watermelon to shine through, I suggest small mozzarella balls with salt and pepper.
The feta cheese is salty & briny. I always season the watermelon on its own. The cubed watermelon with salt and lime paired with the salty cheese & black pepper is what makes this little combination perfect. Finally, the herbs just make everything perfectly refreshing. t
