Thai Chicken Skewers w/ Peanut Sauce. Holy WOW to this recipe. It’s healthy, it is so so flavorful, it’s soy free, it’s easily Keto, it’s gluten free. I mean, these Thai chicken skewers are everything you want for a dinner. They are also super easy to meal prep. Have I said enough? I worked really hard on this recipe. I remember the first time I ventured into the world of curry. It can be a little bit intimidating for home chefs who would normally not try it! But in this recipe, I didn’t let it become overwhelming. The red curry paste REALLY enhances the peanut sauce (my absolute favorite part of this dish). There is also curry powder in the marinade of the chicken. The thick, creamy coconut milk balances the flavor perfectly. If this is your first time cooking with curry, I am excited. Because I really think the outcome is going to be surprising.

This recipe was inspired by Recipe Tin Eats. I wanted to get out there and try something new on this blog. And I love how I adapted it. I created a soy free, refined sugar free version. I added Cauliflower coconut rice, and I changed up some of the balance of spices. As a blogger, I am so excited to say who inspires me and where some of my ideas come from! But more importantly, this opened an entirely new WORLD of flavors that I cannot wait to dive into on this blog.

Hi Katie!! I am so sorry I missed your comment. YES you can make with frozen cauliflower rice. I would cook it however you normally like and then put it in the pan towards the end.
