    Roasted Strawberry Ice Cream

    Roasted Strawberry Ice Cream with Strawberry Jam Swirl. This is a simple, easy, Philadelphia style Strawberry Ice cream. That means there is no eggs! So we don’t have to stress over making a custard base, and I would suggest it even for ice cream making beginners. We roast the strawberries in sugar so they are super sweet, and blend them into the milk. To keep some of the tanginess, I added a strawberry jam swirl to balance the sweetness. It is honestly perfect.

    Making this ice cream is fun, but serving it to family and friends or eating a big bowl while you are binging a new TV show is even better.

    Roasted Strawberry Ice Cream

    Strawberries are EVERYWHERE lately. Huge containers of them are on sale at my grocery stores, and I have been receiving them in my farm share each week. And all I could think about was roasting them. This is the life of someone who loves food. Roasting the strawberries brings such a deep, sweet strawberry flavor. Blend them in the blender with your ice cream base, and your entire base is already finished.

    I used three tablespoons of corn syrup in the base this time along with the sugar. And I also went with a Philadelphia Style Ice Cream (meaning, no eggs). I didn’t want a thick-custard base to take anything away from the strawberry flavor. Corn syrup brings a lovely consistency to the ice cream, and I think you will love the addition. Plus, corn syrup lasts forever and I will definitely be using it again! I also strained the ice cream base into a bowl nestled in ice. This cooling process is not 100% necessary, but I find it makes the ice cream absolutely creamy and delicate.
