I am really proud of all of my recipes. But sometimes, I get an idea and I can’t even believe I pulled it off. These Healthier, Vegan Homemade Snickers Bars are a chocolate, peanut caramel dream. And they taste frickin’ AWESOME. After the success, love and, honestly, my own excitement from the 6 Ingredient Mini Chocolate Coconut Bars, I really wanted to simplify another candy with real food and great ingredients.
The “nougat” as I am calling it, is two ingredients: my trusty soaked dates & oat flour. Blended together, they form a sweet dough that mimics the soft & chewy nougat we love (but with way less sugar!). The only SEMI-tricky part of this recipe is the peanut caramel. The peanut caramel is only tricky if you do not have a candy thermometer. This is the one that I suggest. BUT if you don’t have one, no need to worry. I went a long, long time without a candy thermometer! The temperature of 230 degrees ensures it gets to the perfect consistency. Vegan peanut caramel should set enough to cut into the bar, but still be sticky and stretchy even after being chilled.
If you don’t have a candy thermometer, just keep your eye on it. Thick, slow rolling bubbles and a darker color are exactly what you are looking for. Don’t be nervous, I know you can do it! I honest-to-God ate all of these bars myself and in three days. They are so good I haven’t been able to stop eating them. AND I haven’t given them to anyone to get them out of the house.
