20 Minute Spicy Thai Peanut Noodles. My Thai Chicken Skewers with Peanut Sauce & Coconut Cauliflower Rice is one of my favorite additions to the blog. It is so flavorful & good, and it makes so much extra peanut sauce! Not a bad problem to have, if you ask me. BUT what do we do with that extra peanut sauce?! Make Spicy Thai Peanut Noodles.
Making the sauce is very quick and easy, even if you haven’t made the skewers. Just dump everything in a bowl & whisk it up. That is my favorite kind of recipe. The best part about these noodles, is that once you prep your ingredients you are basically ready to assemble. Slice the cucumbers & carrots, chop the garlic & cilantro, grate the ginger. Cook the noodles. To add the spiciness, I chose sriracha. You can add as much or as little as you want to the peanut sauce while it is warming in the pan. I only add about 1 tbs because I am a gigantic baby when it comes to spice!
To jazz this up or “zhuzh” (which I just learned how to spell) we add a little more freshness. Toast sesame oil tossed with garlic & ginger and THEN toss your al dente noodles in the sauce. Holy mama it is so flavorful.
This week I so needed these spicy thai peanut noodles. With one straight week of recipe fails and busy nights, this is a go to quick dinner. As a side note, I also found super cheap, and very cute, reusable chopsticks on amazon! So I linked them here. They are so much better than wooden chopsticks & I have no learned I can use one to stir natural peanut butter. It is a WIN all around, everybody!
