Summer Peach & Arugula Salad with Burrata. Chicken & peaches on the grill with balsamic is an unexpected summer combination that you will love. On top of spicy arugula, creamy burrata & salty pepitas, it is summer in a salad. AND it is so easy to make. Most of the work comes in assembly!
I love a huge, hearty salad with unexpected flavor combinations. And I also love fruit in salad. The sweetness of peaches here is the perfect combination. Because they are grilled, the peaches take on a tiny bit of char to make them a little more savory. I prefer to grill the peaches in the big halves so nothing falls through the grill grates.
That being said – you can cook the chicken and peaches in a cast iron skillet, on your favorite pan, a grill or a grill pan. If you have very ripe peaches & don’t want to grill them, raw would be just as good.
Making the salad is a majority of the process here. Layer of arugula, chucks of avocado, balls of burrata. Then finally lay your warm chicken and peaches over it. I do enjoy this salad the next day, but I always pack the toppings separately of the lettuce and pepitas. Feel free to substitute with (not grilled) dried figs, nectarines, and even strawberries could work! The burrata could be substituted with fresh mozzarella, the small mozzarella balls would be perfect.
I also love the salted pepitas. Pepitas are the inside of sunflower seeds & are salty little crunchy pieces. It’s kind of like granola for salad! But pumpkin seeds, salted cashews, or pistachios would be perfect. Ripe peaches are one of the lovely parts of summer. I hope to have a peach dessert coming up soon, but tomorrow a peach tea cocktail is going out and you are going to love it.
