Healthier Brown Butter Strawberry Rhubarb Crumble. Fewer things make me happier than a damn good dessert. This recipe has been deemed “one of the best things I’ve ever made” by the ultimate taste tester, the man who has to taste EVERYTHING I make and listen to me critique it endlessly, my boyfriend, Steve. And while that may mean literally nothing to you, I can’t even explain to you how many things he has tried for this blog. I wait patiently, and annoyingly, as he goes in for his first bite of something new I created and his excitement about this has me just as excited to share it with you.

Are you seeing rhubarb all over Instagram & Pinterest but you have no idea what the fuck it even is?? Well, it looks like pink celery. And it has a celery texture as well. But it is really sour. If celery were a Warhead candy, that would be what raw rhubarb tastes like. BUT it will totally knock your socks off when rhubarb is treated correctly. We balanced out the sourness in this recipe by first tossing it in coconut sugar. Then let it sit to release some of the juices. Roasted strawberry is a perfect counterpart. And finally it has tons of vanilla to balance every aspect of the filling for ultimate amazingness.
BUT the extra special kicker here is the browned butter. I know I have gone on many a rant about brown butter – the science of it never ceases to blow my mind. By doing literally nothing but heat the butter, you are turning it into this immensely flavorful component of a dish. Mixed with oats, almond flour and coconut sugar and sitting on the vanilla-y, rhubarb, strawberry mixture, brown butter will change your life. How often do I say foods will change your life? Maybe too often. But I BELIEVE IT. You will never want to make a sweet dessert again without it.
This HEALTHIER brown butter Strawberry Rhubarb Crumble is gluten free (as long as you use gluten free oats), there are no refined sugars and really not much sugar, and it’s mostly fruit, oats and almonds. But holy wow, it will change you. I am determined to get more people to pick up rhubarb this spring. And if you live near me, CALL ME, I am bringing some to you just so you can make this recipe.
