Spinach & Goat Cheese Stuffed Chicken wrapped in bacon drizzled in balsamic glaze with tons of fresh basil. Cut this up and add it to a salad or serve for a simple dinner. This bacon wrapped chicken looks more challenging than it is and has everyone’s favorite ingredients. In my opinion almost nothing with goat cheese or a balsamic glaze or bacon can taste bad! And as for spinach, I’ve said it once and I will say it again, it is the best vegetable. So easy to add to things and a ton of spinach still shrinks down tons and is easy to blend in to the rest of the dish. Okay let’s get into the details.

Stuffing the Chicken Breast
Actually stuffing the chicken is probably the most challenging part of the recipe and I am using that word super lightly. I don’t think there is much of a challenge at all, and there definitely won’t be after I walk you through it. Cut through your chicken breast like you are butterflying it and making a chicken cutlet, but leave the other side intact. Do this for all 3 or 4 chicken breasts.
The next step is actually very important. Add your goat cheese & spinach into a bowl. Mix it up with your hands, crushing and bruising the spinach as you do. The spinach will start to wilt immediately and become much more combined with the goat cheese. This will make it much easier to stuff the chicken. Fill the chicken envelope you just made (totally bizarre image, but gives an accurate visual!) with the goat cheese, spinach mixture and close the chicken. It’s okay if there is a little bit open because we are going to wrap it in bacon.
