    Fig & Bacon Baked Brie

    Fig & Bacon Baked Brie. It is fig season. And every year at QSC, I celebrate fig season by giving you a recipe that is really delicious. The possibility of converting everyone into a fig lover excites me. Last year, I made a Fig & Goat Cheese Pizza with Prosciutto & Balsamic Glaze. A recipe I have made constantly since. This fig season, I am sharing a gooey, warm, cheesy baked brie with fig & bacon jam. You can make this fig & bacon jam on it’s own and store it in a jar for 3-5 days. Spread it on pancakes, breads, cheeses. Add it to a charcuterie board. OR you can make this Brie Dip as a fall appetizer or dip for the next family party.

    I am finally home. I am no longer spending half of my time at the beach. While I am sad to miss sunrises over the ocean, and peaceful beach days, I love the fall so much. Cool breeze at night, crisp air, pumpkin everything. I don’t even hate the pumpkin craze! It means the changing leaves are right on our heels. There are weddings, parties, and so many events to cook and bake for. I could go on and on about all of the reasons I love fall, but my mind is blanking tonight as I type. There are so many ideas I cannot wait to share. For now, let’s talk this baked brie.

    Fig & Bacon Baked Brie

    There is something that I love so much about bacon with sweetness. Sweet and salty is a truly awesome combo. And we are making it savory by adding a brie. I like to use a goat brie. It has a goat cheese flavor with the consistency of a gooey brie. But feel free to use any brie of your choosing. Ask your cheesemonger for a milder flavor or funkier flavor! A little bit of orange zest brightens this dish up without too much orange flavor. All you have to remember while making the jam, is cook on low heat and be patient. Stir often, and let it get delicious and sticky.
