Burst Tomato Halibut w/ summer herbs. One Pan. A 20 minute dinner. There are barely any ingredients to prep, and yet it is the epitome of summer and so delicious. I can eat these burst tomatoes every single day of summer. The mixture of extra virgin olive oil, fresh summer herbs and tons of garlic with juices warm tomatoes is so lovely. By the way, I feel I may even need to mandate your favorite garlic bread or crusty sourdough for the juices. I think you really are going to love this one.
It is very similar to my Herby Poached Cod. But here, with the Burst Tomato Halibut, we focus on that summer tomato flavor, AND we don’t even need to use an oven. We also don’t even need to cut tomatoes. Just throw them in a pan & cook. How simple is that?! Simmer the tomatoes until they begin to soften, snuggle the halibut into the tomato juices & oil and let them cook gently until perfect. This will make anyone love fish. And it is very easy to make a ton of for summer while still impressing your guests.
